Recipe Exchange - Geckorian - 12-27-2016

After seeing the cocoa exchange on another thread thought it might be a good idea to make a spot to exchange cooking recipes in general. I personally like to cook and like to try new recipes. So, to begin, below is a vegetarian friendly soup.

Chipotle Corn Chowder
Ingredients
3 1/2 cups vegetable broth                     1/4 teaspoon ground cayenne pepper
3 cups frozen whole kernel corn              1 1/3 cups evaporated fat free milk
2 cups chopped green bell pepper           6 tablespoons all-purpose flour
2 cups chopped red bell pepper               1 package (12oz) Morningstar Chipotle Black Bean Crumbles
2 cups sliced carrots                                8 ounces American cheese
1 teaspoon ground cumin                       cut up parsley sprigs (optional)

Directions
1. In dutch oven combine broth, corn, peppers, carrots, cumin, and cayenne pepper. bring to boil. Reduce heat. Simmer, covered, for 5 minutes. (if you don't have a dutch oven, use large sauce pan)
2. In small bowl whisk together milk and flour. Stir into the hot mixture in saucepan. Bring to boil. Stir in crumbles. cook over medium heat until crumbles are hot, stirring frequently. Add cheese, stirring until melted.
3. Ladle chowder into bowls. Garnish with fresh parsley sprigs.

Alterations
You can swap out the bean crumbles for any ground meat.
You could do this in a crock pot just cook every thing but milk, flour, and cheese together on low for 5hrs. When nearing done, ladle out some of the broth into a saucepan and add milk/flour mix into hot broth to make a gravy-like broth. Return the gravy mix to crock pot and let cook another 1/2 hour then add cheese and mix until melted.

Chops with golden mushroom gravy

2-4 pork chops (also works with loin chops, end chops, or similar cuts)
1 can Golden Mushroom condensed soup
1 can Cream of Mushroom condensed soup
1 can French-cut Green Beans, drained (can sub for 10-12oz frozen; just microwave them for 4 minutes and set aside)
1/2 pound of wide egg noodles (can sub 2 cups (uncooked measure) of rice or sub with mash potatoes).
roughly 1 tsp of seasoned salt
roughly 1/2 tsp of fine black pepper
1 T. worcestershire sauce

Prep meat by seasoning both sides with seasoned salt and black pepper
I large pot add 6-8 cups water and bring to boil. Add noodles and cook until tender (usually about 8 minutes). drain.
While noodles cook: In large frying pan (I use a 5.6qt chicken fryer), lay in chops and sprinkle worcestershire sauce over them. Cover with lid and cook on medium until top side changes color, careful not to run the pan dry of juice (if pan gets dry add small amounts of water to pan). This is about 5-7 minutes. Turn chops, sprinkle with worcestershire sauce, cover, and continue to cook another 5 minutes or until no longer bloody. Remove lid and let excess liquid evaporate, searing each side of chops until golden brown, flip as needed.

Remove chops from pan, set heat to low and add to pan cans of soup and green beans. Mix well and return chops to pan, setting them into the sauce and cook, covered on medium low for 3 minutes. turn chops and repeat: covered for 3 minutes.

Plate chops and side with noodles covered in the soup/bean gravy.

Onion Meat Loaf
1 lbs. ground beef
2 eggs
1 c. milk
1/2 c. bread crumbs
2 tsp. salt
1/4 tsp. pepper
1 chopped onion, and if you want use 3/4 c. milk and dont use the eggs. Also recommend cracker crumbs if you dont have bread crumbs.
Mix slightly beaten eggs (or soak milk) with ground beef and add the other ingredients and mix as well, bake @350 for 1 1/2 hours

Cooked Salmon
carrots
broccoli
cauliflower
2-3 slices of salmon
lemon
salt
black pepper
butter
1/5 c. cream

Get a casserole and rub it with butter, add in whatever vegetables you want (i prefer carrots, broccoli and cauliflower).
Put salmon on top of the vegetables and season it with salt, black pepper and a bit of lemon.
Add 1/5 c. cream and a tablespoon full of butter
place the casserole in the oven and cook it for 40 minutes on 250 degrees
