I have a villager 'nursery' set up which has been successfully producing new villagers for me, until recently (maybe a week or two ago) when they just stopped breeding.  I'm relatively new to villager breeding, but I'm not doing anything differently now from what I was doing when they were breeding. Maybe it's a server cap on villagers, or maybe I'm missing a detail?

Any advice would be appreciated, cheers.

Possibly the mob cap?
Try spreading the villagers out over a larger area, that might work.

Hmm.. maybe I'll 'boat' one or two of them far away. Maybe the remaining ones will start getting busy again.
