Would it be possible to craft end crystals and respawn the ender dragon, or do we have to wait for the reset of the end? I don't wanna destroy anything.

You can get the crystals via slots or by buying in shops to respawn them in resend

Are you able to get the egg at you kill it?

No, the egg only drops the first time the dragon is killed on the map.
