One possible situation is that a stronghold can also sometimes be overwritten by stuff like ravines and the ocean floor, leaving giant gaping holes in the architecture. It's possible you'll find nothing more than tiny isolated rooms hidden in the stone.

Update: We checked, even with Spectator Mode. There was no Stronghold sadly. But thanks for the advice. How do I close this forum?
